If you follow me on instagram, you would have known that I baked rainbow cupcakes yesterday!!! I spent 6 hours baking everything D:
But I am super happy with the results!

So now, I'm going to tell you how I baked mine!!
It's pretty simple actually!

I used a cake mix! Haha! Yes, I am lazy to bake from scratch :(
Anyway, these are super common, you can get them from cold storage, NTUC etc. But make sure that you get the WHITE one, NOT the yellow one. This is because you are going to mix in colours, and you don't want the yellowness to alter any of your pretty colours!
And as you can see, you only need egg whites, vegetable oil and water! It's so simple!! :)
And how can you forget the oh-so-beautiful food colourings when you wanna make a rainbow cupcake!?
I had such a hard time looking for the blue food colouring though. hehe.
Do note that all my ingredients came from either Cold Storage or NTUC. You'll have to search for them yourselves as not all outlets sell the same things.
I'd suggest you head over to NTUC first, since the things are cheaper, for rarer items, go to Cold Storage to find, since they have a wider variety :)
Alternatively, you can go to Phoon Huat. It is where I got my cotton candy sprinkles :)
Now, I'm going to go step by step into how I made my cupcakes! :)
Step #1:
Empty the cake mix into a mixing bowl!
Step #2:
Put in all your wet ingredients which contains 1 and 1/4 cups of water, 1/3 cup of vegetable oil and 2 egg whites.
Step #3:
Mix them together with a mixer or manually!
Step #4:
Stop when you achieve a smooth consistency with no chunky flour bits :)
Step #5:
Separate the batter into 7 bowls, equally. You can which ever number of colours that you want! :)
Step #6:
Add your food colouring in, and mix until you reach your desired colour intensity!!

And, this pretty swirl combination is when I mixed red and blue food colouring to get purple! ^^
Step #7:
Add your coloured batter, layer by layer into your cupcake tray!
You can choose to spread it evenly or just blob it in!
The subsequent pictures would be pictures of each layer that I spreaded so painstakingly.
I took 30 minutes spreading all 7 layers! I almost died :(
This is the one that I made, where I just blobbed the coloured batter in the middle, on top of each other such that they formed like a ring :)
Step #8:
Tap the tray on the table for a few times to get rid of the air bubbles in the cupcakes so to get prettier cupcakes :)
Then pop them into the oven for 18-22 minutes.
Remember to check on them from time to time so that they don't burn.
Take a toothpick and poke into the cupcake, if it comes out clean, it's cooked!
Step #9:
Make the frosting!!!!

I personally like sweet things, so I like this frosting. But if you don't really like sweet things, you can alter the amount of sugar you add :)
Chill it after you make it so that it isn't too flowy.

I tell you, the rainbow layered is my favourite! I love how it looks like a pastel rainbow, so beautiful and delicious at the same time!! <3

I gave some to my mum for mother's day and she loved it, though she complained that it was too sweet for her liking :(
I gave the rest to my dearest Beekers too and they all said the cupcakes looked gorgeous and tasted awesome. Awwwww. :D
So proud of myself ^^ hehe
